Published by Summersdales @ £7.99 Galicia is for me one of, if not, the best place in the world for gourmets and gourmands. Mr. Barlow makes reference to the squeal, which as every pork lover knows is the only part of the pig one cannot cook. Strangely I had always thought of Galicia as a fish eating region and had entirely forgotten the Pig. This amazing region produces fabulous produce as is related in this book. It is difficult to find a poor restaurant in Northern Spain, unlike Britain where this very weekend I discovered to my horror that Cornwall cooks 1950s.
Yes utter tripe, so off to Gourlicia and expand one's waistline. John Barlow, a Yorkshire man by birth, relates the history of the region together with his amazing recipes.
See Coido, a pork stew, with half a head, a shoulder, three snouts, five ears, five trotters, ten chorizos, a hen, three tongues and so on - a total of nineteen ingredients. The dish is supposed to be for ten people! More like twenty-five in my modest opinion. What appetites the locals have! Barlow is very good on pigs, yes the book is almost entirely edible.
